What’s Cookin’ kicks off this week, offering recipes and tips for cooking from scratch. Louise Barnisky, of Marlinton, well-known for sharing the bounty of her kitchen and garden, will now share her favorite, and/or requested recipes with our readers. Hot Rolls
2 Cups Warm Water
2 Tbsp. Sugar
1 Tbsp. Salt
1 Pkg. Dry Yeast
3 Tbsp. Soft Shortening
7 Cups All-Purpose Flour
Add sugar and yeast to water and let sit five minutes until it foams.
Add shortening, salt and flour. Mix well.
Knead until it is nice and soft, add additional flour if the dough is too sticky – only enough to make the dough easy to work.
Cover and let rise for one hour.
Grease a regular bread or oblong cake pan.
Shape dough into about 24 rolls and place in pan.
Brush the tops with oil.
Cover and let rise a second time – until they reach the top of the pan.
Preheat oven to 410º.
Bake rolls for about 30 minutes.
Remove from oven and brush tops lightly with butter or margarine.
This is my recipe. I don’t do much measuring. I’ve made them so many times. I hope this works for you. Call me if you need advice.
