Applesauce Cake
2 cups sugar
1 cup butter or margarine
2 cups applesauce
1 cup walnut or pecan pieces
1 cup raisins
3 cups flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 ¾ tsp. baking soda
Cream sugar and butter until light and fluffy.
Add applesauce, nuts, raisins, which have been dredged in ¼ cup flour.
Sift flour and dry ingredients together and add to mixture.
Pour into a greased and floured tube pan.
Bake 1 hour and 20 minutes at 325 degrees.
Pecan Christmas Cake
4 eggs
1 tsp. salt
1 cup sugar
1 tsp. vanilla
1 cup flour
1 tsp. baking powder
1 quart whole pecans
8 ozs. whole pitted dates
Brandy
Beat eggs by hand.
Stir in salt, sugar and vanilla.
Add flour, sifted with baking powder.
Stir well.
Fold in pecans and dates.
Bake at 350 degrees for 1 hour and 30 minutes in a well greased, paper lined tube pan.
Remove from pan immediately.
When cool, baste with brandy.
Wrap in foil.
Repeat basting five times at four-day intervals.
This cake will keep indefinitely.
Freezes well.
