What’s Cookin’?

Italian Shrimp Stir-Fry
8 oz. uncooked linguine 
3/4 cup Italian Dressing
1 1/2 tsp. grated lemon zest 
3 cloves garlic, finely chopped
3/4 pound uncooked medium shrimp, peeled and deveined 
3 cups broccoli florets
1 medium yellow squash or zucchini, cut lengthwise in half then cut crosswise into slices 
2 Tbsp. water
8 cherry tomatoes, cut in half
12 extra-large pitted ripe olives, cut in half
1/4 cup chopped fresh basil leaves (or 1 Tbsp. dried)
Grated Parmesan cheese, optional 
Cook and drain linguine according to package directions; keep warm.  Mix Italian dressing, lemon peel and garlic; set aside. 
Spray 12-inch non-stick skillet with cooking spray or 1 tsp. olive oil; heat over medium-high heat. Add shrimp; stir-fry about 2 minutes or until shrimp are pink and firm. Remove shrimp from skillet.  Spray skillet with cooking spray or use 1 tsp. olive oil; heat over medium-high heat. Add broccoli and squash; stir-fry 1 minute. Add water.  Cover and simmer veggies about 3 minutes, stirring occasionally, until vegetables are crisp-tender.  Add more water to prevent sticking, if necessary. 
Stir in dressing mixture; cook 30 seconds.  Stir in tomatoes, olives, basil, shrimp and linguine, stir-fry until hot. Sprinkle with cheese.  Serve.  This was also good served cold the next day. 
Serves 4-5. Diabetic Friendly. 

Cheesy Chicken Skillet Dinner
2 tsp. olive oil
1 1/4 pounds boneless, skinless chicken breasts, cut into 3/4-inch pieces
2 lg. carrots, cut into 1/8-inch slices
1 medium zucchini, cut into 1/8-inch slices
2 Tbsp. soy sauce
8 medium green onions, thinly sliced 
2 cups shredded cheddar cheese
Heat 12-inch non-stick skillet over medium high heat. Add oil, rotate skillet to coat bottom.  Add chicken; stir-fry 4-5 minutes until no longer pink in center. Remove from skillet. 
Add carrots and zucchini to skillet.  Stir-fry 4-5 minutes or until crisp tender.  Add chicken and soy sauce; toss until chicken and vegetables are coated with soy sauce. Sprinkle with onions and cheese.  Cover skillet until cheese is melted.  
Serves 5-6.  Diabetic friendly.
